Red Hot

WIngs.jpgWhile we’re on the Valentines Red theme… Another red favorite in our house is wings sauce. I know that there are people who believe this sauce should be relegated to sports bars, but I personally LOVE it on rotiserrie chicken (SUPER easy and always appropriate!) from the deli or chicken fingers grabbed from the bag in my freezer. After spending untold $$ on sauces, I finally learned how to make this liquid gold. All you need is two ingredients and a slight amount of patience.

To make wings sauce, combine a bottle (usually 6-8 oz.) of your favorite hot sauce with a stick of butter in a small saucepan. Heat over medium-low heat until butter melts. That’s it. The only warning I offer is that medium-low really does mean medium-low. Remember folks, this is pepper sauce. If you heat the sauce too quickly, you’ll release pepper gas — and no one wants that!

Another fabulous use for this sauce is our favorite version of gourmet fries. Bake and salt your favorite fries in the oven (we like Ore-Ida Crinkle Cut.) Before serving, liberally drizzle wings sauce then ranch dressing over the fries. While it isn’t my healthiest fare, it’s one of my absolute favorite fast-food lunches!

    Something that can stand the heat: a Shiraz, or a big Zin. Have you ever tried a Petite Syrah? I had Rosenblum’s recently, and ‘petite’ is completely misleading.

    Not only do I love wing sauce, but I treat wing sauce like you do salsa! I eat it on everything.. salads, rice, even baked potatoes! Can’t get enough of it!

    Demi, yes a Zin, or something acidic with a little sweetness, like a Riesling.
