Brushetta Pasta

bruschetta.jpg It feels like time for another recipe, so I’m going to share one of my weeknight faves. I’m a big fan of fast and easy, but healthy, recipes. This one meets with the approval of my entire family — preschool, teen, and then us grown-ups.

Bruschetta Pasta

Pasta (2 oz. per serving) — this is a GREAT recipe for whole wheat pasta
Pre-made Bruschetta Mixture (I buy Hannah’s at Costco)
Italian blend cheese

Boil pasta. I really like bowtie or penne for baking, but spaghetti works just as well. Avoid angelhair, as it’s just too insubstantial.

Drain pasta and transfer to baking dish.

Top pasta with enough Bruschetta mixture to cover — I usually use half of a container for my family of 4.

Top pasta & Brushetta with cheese blend. I used about a cup, but this is entirely up to your personal taste.

Cover dish with aluminum foil and bake at 350 for about 30 minutes. You’re done when the cheese is hot and bubbly.

Serve with a salad, a loaf of good bread, olive oil (and Balsamic vinegar) to dip the bread in, and your favorite glass of wine — or apple juice for the kids!

    Yum! Can’t wait to try this, my hubby will go nuts for it. Do you know if you can find bruschetta mixture in a regular grocery store? We don’t do Sam’s or Costco here.

    Jennifer, yes! Most groceries have this with the high-end (refrigerated) salsa. In some groceries, that’s near the deli area. In others, it’s nearer the produce. You can MAKE your own bruschetta, but tomatoes are not at a good point for it now…
