Benedictine Eggs

We’ve had a family tradition of Eggs Benedict on New Year’s Day since The Boy was living at home. We usually have some leftover ham, and it’s the season for lemons here, so the raw materials are generally in the house at the time. Sometimes I go all out and make the English Muffins too!

Here’s a basic recipe — actually more like instructions:

Layer toasted English Muffins with:
Sliced ham (heated up in a frying pan or microwave)
Slices of Monterey Jack OR Brick OR Muenster
Poached Egg
Hollandaise Sauce

Have you seen the pre-cooked sausage patties in your area? We use them for quick breakfasts and sandwiches mostly, but the other day we had some leftover cheese sauce and tried this:

Eggs Benedict Arnold

2 slices bread
2 sausage patties
2 poached eggs
Cheese sauce

It just seemed logical, that as I’m a fan of the original Battlestar Galactica series, another recipe should be called “Eggs Dirk Benedict.” He played Starbuck and is now doing all kinds of other things, including writing books. His website is here.

Anyway, here’s the recipe.

Eggs Dirk BenedictIn this order, layer:
Thick-sliced French bread
Poached eggs
Thin breakfast steak
Hollandaise Sauce

Along the way, I stumbled on a website devoted to cheese. Yep, it’s all cheese, all the time!
